- 2 lobsters (about 1 1/2 pounds each)
- 4 cups fish or seafood stock
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 2 cups corn kernels (fresh or frozen)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 bay leaf
- 2 cups whole milk
- 1 cup heavy cream
- Salt and freshly ground black pepper to taste

Cook and Prepare the Lobsters:
Bring a large pot of salted water to a boil. Drop the live lobsters into the pot and cover. Cook for about 8-10 minutes until the shells are bright red. Remove the lobsters and let them cool slightly. Crack the shells and remove the lobster meat. Chop the meat into bite-sized pieces and set aside.
Make the Stock:
In a large saucepan, bring the fish or seafood stock to a gentle simmer. Add the lobster shells (except the ones you'll use for garnish) and let it simmer for about 20-30 minutes to infuse the flavor. Strain the stock and set it aside.
Sauté Aromatics:
In a large soup pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
Add Potatoes, Corn, and Spices:
Add the diced potatoes, corn kernels, dried thyme, dried oregano, paprika, and bay leaf. Stir well to coat the vegetables with the aromatic mixture.
Pour in Stock and Simmer:
Pour in the strained lobster stock. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender.
Blend a Portion (Optional):
For a creamier texture, you can remove about 1/3 of the chowder and blend it until smooth. Return it to the pot.
Add Milk, Cream, and Lobster Meat:
Pour in the whole milk and heavy cream. Stir to combine. Add the chopped lobster meat and gently stir. Cook for an additional 5 minutes until the lobster is heated through.
Season:
Taste and adjust the seasoning with salt and pepper. Remove the bay leaf.
Serve:
Add Bubs. Eat soup.
